Ingredients

  • 1 1/2 lb. potatoes, sliced thin (about 4 c.)
  • salt and pepper
  • 1 can whole kernel corn, drained
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 4 carrots, peeled and sliced
  • 1 1/2 lb. ground beef
  • 1 (8 oz.) can tomato sauce
  • 1/2 c. grated Cheddar cheese

Method

  • Layer potatoes in an oiled baking dish.
  • Sprinkle with salt and pepper.
  • Spread corn; sprinkle with pepper, onion and carrots. Crumble beef over top.
  • Sprinkle again with salt and pepper.
  • Top with tomato sauce; spread evenly.
  • Bake, covered, for 30 minutes. Top with cheese and bake for 10 to 15 minutes longer.
  • Serves 4 to 6.
