Ingredients
- 1 1/2 lb. potatoes, sliced thin (about 4 c.)
- salt and pepper
- 1 can whole kernel corn, drained
- 1 green pepper, chopped
- 1 onion, chopped
- 4 carrots, peeled and sliced
- 1 1/2 lb. ground beef
- 1 (8 oz.) can tomato sauce
- 1/2 c. grated Cheddar cheese
Method
- Layer potatoes in an oiled baking dish.
- Sprinkle with salt and pepper.
- Spread corn; sprinkle with pepper, onion and carrots. Crumble beef over top.
- Sprinkle again with salt and pepper.
- Top with tomato sauce; spread evenly.
- Bake, covered, for 30 minutes. Top with cheese and bake for 10 to 15 minutes longer.
- Serves 4 to 6.
