Ingredients

  • 1/2 cup whole wheat flour
  • 1/2 cup flour, all-purpose
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 2 cups all-bran cereal
  • 1 1/4 cup milk skim
  • 13 cup brown sugar firmly packed
  • 1 each eggs
  • 1/2 cup applesauce
  • 1/2 cup cranberries, dried

Method

  • Heat oven to 400F (200C).
  • Mix flour, baking powder, baking soda and cinnamon in large bowl.
  • Mix cereal, milk and sugar in another bowl; let stand 5 minutes.
  • Stir in egg and applesauce.
  • Add to flour mixture; stir just until moistened.
  • (Batter will be lumpy).
  • Spoon batter into muffin pan lined with foil cups, filling each cup 23 full.
  • Bake for 18 to 20 minutes or until browned.
  • Makes 12.
