Ingredients

  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 2 tsp. vanilla
  • 2 c. grated zucchini (unpeeled)
  • 1 c. (8 oz.) crushed pineapple, well drained
  • 3 c. flour
  • 2 tsp. soda
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 3/4 tsp. nutmeg
  • 1 tsp. salt
  • 1 c. raisins
  • 1 c. chopped nuts

Method

  • Grease and flour two loaf pans.
  • Beat eggs lightly in large bowl.
  • Stir in oil, sugar, zucchini, pineapple and vanilla.
  • Sift flour, baking powder, soda, cinnamon, nutmeg and salt together. Stir into egg mixture until well blended.
  • Stir in raisins and nuts.
  • Pour into 2 well-greased and floured loaf pans.
  • Bake at 350° for approximately 1 hour.
  • Cool in pans 10 minutes.
  • Remove from pans and cool completely.
  • Ice with caramel frosting.
