Ingredients

  • 5 pounds potatoes - peeled and quartered
  • 2 cloves garlic - chopped
  • 1 red onion small, - sliced
  • 3 tablespoons butter
  • 2 tablespoons sour cream
  • 1/2 cup milk
  • 4 ounces cheddar cheese - shredded
  • 1 dash salt
  • 1 dash black pepper
  • olive oil
  • cheddar cheese
  • garlic
  • mashed potatoes
  • potatoes

Method

  • Boil the quartered potatoes until fork tender. Drain the potatoes and place in a large bowl.
  • Place the chopped garlic in with the hot potatoes, the butter, sour cream and milk and mash with a masher.
  • Butter a casserole dish and place the mashed potatoes in the dish. Add the cheddar cheese and toss gently.
  • Top with the sliced onion and a drizzle of olive oil.
