Ingredients

  • 8 ounces, weight Ground Beef
  • 2 cloves Garlic, Minced
  • 1/2 teaspoons Cayenne
  • 1 whole Medium Tomato, Chopped
  • 1/2 cups White Onion, Chopped
  • 1 whole Jalapeno, Diced (stem And As Many Seeds Removed As Desired For Heat)
  • 4 whole Poblano Peppers
  • 8 Tablespoons Mozzarella, Shredded

Method

  • In a large skillet over medium heat, brown the ground beef, garlic and cayenne until beef is brown and crumbly.
  • Add the tomato, onion and jalapeno (I didnt remove the seeds when dicing; you wont notice theyre there, I promise).
  • If you want some heat, add another half or whole jalapeno to the mixture.
  • Cook the mixture for about 3 minutes.
  • Remove from heat.
  • Preheat oven to 350 F. Slice poblanos in half lengthwise and remove seeds.
  • Coat a small baking dish with non-stick spray.
  • Stuff poblanos with meat mixture and place them in the baking dish with the filling side facing up.
  • Sprinkle a tablespoon of mozzarella over each poblano half.
  • Bake for 15 minutes then remove dish from the oven.
  • Poblanos will still be firm.
  • You dont want a soft pepper.
  • Serve with salsa and jalapeno slices.
