Ingredients

  • 24 vanilla wafers
  • 2 (8 oz.) pkg. cream cheese, softened
  • 3/4 c. sugar
  • 2 eggs
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla
  • 1 (20 to 21 oz.) can cherry or blueberry pie filling

Method

  • Line cupcake pans with 24 cupcake liners.
  • Place a vanilla wafer in bottom of each liner.
  • In small bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.
  • Fill the liners 3/4 full with cheese mixture.
  • Bake in preheated 375° oven for 15 to 20 minutes or until set.
  • Top each with spoonful of filling.
  • Chill.
  • Serves 24.
