Ingredients
- 24 vanilla wafers
- 2 (8 oz.) pkg. cream cheese, softened
- 3/4 c. sugar
- 2 eggs
- 1 Tbsp. lemon juice
- 1 tsp. vanilla
- 1 (20 to 21 oz.) can cherry or blueberry pie filling
Method
- Line cupcake pans with 24 cupcake liners.
- Place a vanilla wafer in bottom of each liner.
- In small bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.
- Fill the liners 3/4 full with cheese mixture.
- Bake in preheated 375° oven for 15 to 20 minutes or until set.
- Top each with spoonful of filling.
- Chill.
- Serves 24.
