Ingredients

  • 2 1/2 c. unsifted flour
  • 1/2 c. cocoa
  • 2 1/2 tsp. baking powder
  • 1 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 2 c. grated zucchini
  • 3/4 c. butter or margarine
  • 2 c. sugar
  • 3 eggs
  • 2 tsp. vanilla
  • 1/2 c. milk
  • 1 c. chopped nuts

Method

  • Sift dry ingredients and set aside.
  • Cream shortening and sugar.
  • Add eggs one at a time, beating well.
  • Add vanilla and zucchini; add flour, alternating with milk.
  • Add nuts and beat well.
  • Bake 1 hour at 350° in 10-inch tube or Bundt pan, greased and floured.
  • Let cool, then sprinkle powdered sugar over top.
