Ingredients
- 2 1/2 c. unsifted flour
- 1/2 c. cocoa
- 2 1/2 tsp. baking powder
- 1 1/2 tsp. salt
- 1 tsp. cinnamon
- 2 c. grated zucchini
- 3/4 c. butter or margarine
- 2 c. sugar
- 3 eggs
- 2 tsp. vanilla
- 1/2 c. milk
- 1 c. chopped nuts
Method
- Sift dry ingredients and set aside.
- Cream shortening and sugar.
- Add eggs one at a time, beating well.
- Add vanilla and zucchini; add flour, alternating with milk.
- Add nuts and beat well.
- Bake 1 hour at 350° in 10-inch tube or Bundt pan, greased and floured.
- Let cool, then sprinkle powdered sugar over top.
