Ingredients

  • 2 c. flour
  • 1 1/4 c. sugar
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 c. grated carrots
  • 1/2 c. raisins
  • 1/2 c. nuts
  • 1/2 c. coconut
  • 1 apple, peeled, cored and grated
  • 3 eggs
  • 2 tsp. vanilla
  • 3/4 c. salad oil

Method

  • Mix the first 5 ingredients in a large bowl.
  • (You can use food processor to grate carrots and apple.)
  • Stir in next 5 ingredients.
  • In a separate bowl, beat the eggs, vanilla and oil. Stir into flour mixture just until combined.
  • Spoon into well-greased muffin cups, filling almost to top.
  • Bake at 350° for 20 minutes.
