Ingredients
- 1 c. sugar
- grated rind of 1 lemon
- juice of the lemon
- 2 egg yolks (save whites for meringue)
- 1 Tbsp. butter
- 1 c. hot water
- 3 Tbsp. cornstarch
Method
- Mix lemon rind and sugar.
- Add lemon juice and egg yolks. Heat butter and hot water.
- When it boils, add cornstarch to thicken.
- Combine and put in prebaked pie shell.
- Top with meringue.
- Bake at 350° for 15 minutes.
