Ingredients

  • 4 large peaches
  • 1 chocolate crumb pie crust
  • 1 c. heavy or whipping cream
  • 1 (3 1/2 to 3 3/4 oz.) pkg. vanilla flavored instant pudding and pie filling
  • 1 c. milk
  • 1/2 tsp. lemon extract

Method

  • Peel, pit and cut peaches into bite-sized pieces; place half of peaches in chocolate crumb crust.
  • In small bowl, beat at medium speed the cream until stiff peaks form.
  • In large bowl prepare instant pudding as label directs, except use only 1 cup milk. Gently fold whipped cream and lemon extract into pudding mixture. Spoon over peaches; top with remaining peaches.
  • Refrigerate and let pie set for 10 minutes.
  • Serves 8.
