Ingredients

  • 3 large yams (I use to large cans of yams)
  • 1 cup sugar
  • 1/4 cup butter
  • 1/ tsp cinnamon
  • 1/2 tsp. allspice
  • 1/4 tsp. nutmeg
  • 2 cups milk
  • 2 eggs
  • Topping:
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/4 cup butter
  • 1/2 cup chopped walnuts
  • 1/2 tsp. cinnamon

Method

  • Cook yams in boiling water 45 minutes (not necessary if using canned yams).
  • Mash yams while hot. Add 1 cup sugar, 1/4 cup butter, 1 tsp. cinnamon, allspice and nutmeg. Mix well. Beat in milk and eggs. Whip well and turn into a 3 qt. greased casserole.
  • Topping:
  • Combine flour, sugar and 1/4 cup butter until crumbly. Mix in walnuts and 1/2 tsp. cinnamon. Sprinkle over top of sweet potato mixture. Dot with butter.
  • Bake in 375 oven for 35-40 minutes.
  • NOTE: Watch the amount of milk...sometimes depending on consistency of yams, less milk is needed (otherwise it because soupy and doesn't set). It should be about the consistency of mashed potatoes or a little creamier.
