- 1 can condensed milk
- 2 egg yolks + 3 eggs
- 1/2 c. flaked coconut
- 1/2 c. chopped nuts
- 1/4 c. melted margarine
- 2 tsp. vanilla flavoring
- 1 c. sugar
- 2/3 c. unsifted flour
- 1/3 c. unsweetened cocoa
- 1/3 c. water
- confectioners sugar
- chocolate glaze (optional)
Method
- Line 15 x 10-inch jelly roll pan with foil. Grease foil.
- In medium bowl, combine condensed milk, 2 egg yolks, coconut, nuts, margarine and 1 teaspoon vanilla. Mix well.
- Spread in pan. In large bowl, beat 3 eggs at high speed until fluffy. Gradually beat in sugar, then beat 2 minutes.
- Add remaining ingredients, except confectioners sugar. Beat 1 minute. Pour evenly over coconut mixture. Bake 20 to 25 minutes at 350°. Sprinkle with confectioner sugar.
- Immediately turn onto towel. Peel off foil, begin at narrow end and roll up cake, jelly roll fashion. Place on serving plate, seam side down; cool. Sprinkle with additional confectioners sugar and drizzle with chocolate glaze.
