Ingredients

  • 6 eggs (sepatated)
  • 2 1/2 cups sugar
  • 1 pint whipping cream
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (4 ounce) package vanilla ice cream mix (junket)
  • 1 teaspoon vanilla
  • 4 ripe bananas
  • 1 cup chopped pecans (optional) or 1 cup walnuts (optional)
  • milk, to fill freezer

Method

  • Blend in blender: egg yolk, sugar, whipping cream and Junket.
  • Whip egg whites and
  • mix all in 1 1/2 gallon (6 quarts) ice cream freezer.
  • Add milk to finish filling and
  • follow freezer instructions as usual.
  • **I find the Junket mix in the area of the store with the canned milk.
