Ingredients

  • 3 strips bacon, finely chopped
  • 2.5 oz fresh breadcrumbs
  • 1 oz Parmesan, grated
  • 2 tbsp flat leaf parsley, finely chopped
  • 1/4 cup butter, melted
  • 2 cloves garlic, crushed
  • 1 tsp Worcestershire sauce
  • 1/2 tsp mustard powder
  • 4 None chicken breasts (about 6 oz each)
  • None None Creamy Basil Dressing
  • 1 oz basil, leaves finely chopped
  • 1/3 cup heavy cream
  • 1 tbsp olive oil
  • 3 tsp malt vinegar
  • 3 tsp red wine vinegar
  • 1 clove garlic, crushed
  • None None Spinach leaves, to serve

Method

  • Preheat oven to 400°F. Cook bacon in a frying pan on high heat for 3 mins, until crisp. Mix with breadcrumbs, Parmesan and parsley.
  • Combine butter, garlic, Worcestershire sauce and mustard in a shallow bowl. Add chicken; turn to coat.
  • Meanwhile, to make creamy basil dressing, combine all ingredients in a small saucepan on high heat. Bring to a boil. Reduce heat to low; simmer for 2-3 mins, until thickened slightly.
  • Transfer chicken to a baking dish. Press breadcrumb mixture over top. Bake for 12-15 mins, until chicken is cooked and breadcrumbs are golden.
  • Rest for 5 mins, then serve with basil dressing and spinach.
