- 3 strips bacon finely chopped
- 2 1/2 ounces fresh breadcrumbs
- 1 ounce Parmesan grated
- 2 tablespoons flat leaf parsley finely chopped
- 1/4 cup butter melted
- 2 cloves garlic crushed
- 1 teaspoon worcestershire sauce
- 1/2 teaspoon mustard powder
- 4 chicken breasts about 6 oz each
- dressing Creamy Basil
- 1 ounce basil leaves finely chopped
- 1/3 cup heavy cream
- 1 tablespoon olive oil
- 3 teaspoons malt vinegar
- 3 teaspoons red wine vinegar
- 1 clove garlic crushed
- spinach leaves to serve
Method
- Preheat oven to 400°F. Cook bacon in a frying pan on high heat for 3 mins, until crisp. Mix with breadcrumbs, Parmesan and parsley.
- Combine butter, garlic, Worcestershire sauce and mustard in a shallow bowl. Add chicken; turn to coat.
- Meanwhile, to make creamy basil dressing, combine all ingredients in a small saucepan on high heat. Bring to a boil. Reduce heat to low; simmer for 2-3 mins, until thickened slightly.
- Transfer chicken to a baking dish. Press breadcrumb mixture over top. Bake for 12-15 mins, until chicken is cooked and breadcrumbs are golden.
- Rest for 5 mins, then serve with basil dressing and spinach.
