Ingredients

  • 100g penne
  • 1 1/2 cups frozen peas
  • 7 eggs
  • 1/2 cup parmesan
  • 1 tbsp oregano
  • crispy bacon

Method

Cook 100g penne until al dente. Drain. Combine penne, frozen peas (blanched), eggs (lightly beaten),   parmesan (grated) and  oregano (chopped) in a bowl. Season. Heat a 20cm heavy-based frying pan over high heat. Add olive oil and swirl to coat base. Add penne mixture to pan and cook for 2-3 minutes or until set on the bottom, then push edges to the centre, allowing mixture to run under the frittata. Cook for 2-3 minutes or until set around the edges.

Invert onto a plate, then slide gently back into pan and cook for 3-4 minutes or until firm in the centre.

To serve

Serve in wedges with crispy bacon.
