Ingredients
- 1 Tbsp. gelatin, soaked in 1/4 c. cold water
- 1/3 c. softened butter
- 1 c. sugar
- 2 eggs, separated
- 1/2 lb. marshmallows, cut in pieces
- 4 c. sliced fresh peaches
- 2 c. vanilla wafers (crumbs)
- 1 c. whipping cream
Method
- Soak gelatin in water.
- Soften butter in top of double boiler. Add sugar, quartered marshmallows and egg yolks.
- Take off stove; add gelatin.
- Cool.
- Add whipped cream and egg whites (beaten stiff).
- Pour over peaches.
- Line pan with vanilla wafer crumbs, saving a little for top of filling.
- Let stand in refrigerator.
