Ingredients

  • 1 Tbsp. gelatin, soaked in 1/4 c. cold water
  • 1/3 c. softened butter
  • 1 c. sugar
  • 2 eggs, separated
  • 1/2 lb. marshmallows, cut in pieces
  • 4 c. sliced fresh peaches
  • 2 c. vanilla wafers (crumbs)
  • 1 c. whipping cream

Method

  • Soak gelatin in water.
  • Soften butter in top of double boiler. Add sugar, quartered marshmallows and egg yolks.
  • Take off stove; add gelatin.
  • Cool.
  • Add whipped cream and egg whites (beaten stiff).
  • Pour over peaches.
  • Line pan with vanilla wafer crumbs, saving a little for top of filling.
  • Let stand in refrigerator.
