Ingredients

  • 1 cup buttermilk
  • 1 egg
  • 1 small banana, mashed
  • 12 cup creamy peanut butter or 12 cup chunky peanut butter
  • 2 tablespoons margarine, melted
  • 1 cup flour
  • 14 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 18 teaspoon salt

Method

  • Preheat oven to 350F.
  • Coat muffin tins with non-stick cooking spray.
  • In a large bowl, mix together buttermilk, egg, mashed banana, peanut butter and melted margarine until blended and smooth.
  • In a separate bowl, mix together flour, sugar, baking powder, soda and salt.
  • Slowly add dry ingredients to peanut butter mixture.
  • Stir thoroughly until combined.
  • Pour batter into muffin tins.
  • Bake for approximately 25 minutes until golden brown or toothpick inserted in center of muffin comes out clean.
  • Makes 12 muffins.
