Ingredients
- 1 1/4 c. all-purpose flour
- 1/2 to 3/4 c. pecans, ground
- 3 Tbsp. sugar
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 1 c. applesauce
- 3/4 c. milk
- 2 eggs
- 2 Tbsp. margarine, melted
Method
- Combine flour, pecans, sugar, baking powder and salt.
- Beat together applesauce, milk, eggs and margarine.
- Stir in dry ingredients.
- Use 1/4 cup batter for each pancake.
- Cook on greased nonstick griddle over medium-high heat, turning once. Makes 14 pancakes.
