Ingredients

  • 1 c. sugar
  • 1/3 c. flour
  • 1/2 teaspoon salt
  • 2 c. lowfat milk
  • 4 Large eggs, separated
  • 1 tbsp. butter
  • 2 teaspoon vanilla
  • 1 1/2 c. finely minced pecans
  • 4 drops yellow food coloring
  • 1 baked 10 inch pie shell
  • 1/8 teaspoon cream of tartar
  • 6 tbsp. sugar
  • 1 teaspoon vanilla

Method

  • Combine 1 c. sugar, flour and salt in a medium saucepan.
  • Slowly stir in lowfat milk.
  • Cook over medium heat, stirring constantly, till thickened.
  • Stir a small amount of warm mix into beaten egg yolks.
  • Stir back into remaining warm mix.
  • Cook, stirring for 2 min.
  • Remove from heat.
  • Stir in butter, 2 tsp.
  • vanilla, pecans, yellow food coloring.
  • Cold well.
  • Pour mix into pie shell.
  • Beat egg white and cream of tartar till frothy.
  • Gradually add in 6 Tbsp.
  • sugar, beating till stiff.
  • Beat in 1 tsp.
  • vanilla.
  • Spread over filling.
  • Bake at 400 degrees for 5 min or possibly till golden.
  • Cold.
