Ingredients

  • 2 cups tomato puree
  • 3 cloves garlic pressed
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 1 teaspoon oregano
  • 7/8 pound penne pasta
  • 1 1/8 cups mascarpone
  • salt to taste
  • pepper to taste

Method

  • Put the tomato puree in a pan with the garlic, olive oil, sugar, and oregano.
  • Cover and bring to boil. Lower heat and simmer for 15 minutes.
  • Meanwhile, cook the penne in a large pot of salted boiling water according to package instructions.
  • Drain and return to pot.
  • Stir the mascarpone into the tomato sauce, season with salt and pepper, then pour over the pasta.
  • Stir and serve immediately.
