Ingredients
- 2 cups tomato puree
- 3 cloves garlic pressed
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 1 teaspoon oregano
- 7/8 pound penne pasta
- 1 1/8 cups mascarpone
- salt to taste
- pepper to taste
Method
- Put the tomato puree in a pan with the garlic, olive oil, sugar, and oregano.
- Cover and bring to boil. Lower heat and simmer for 15 minutes.
- Meanwhile, cook the penne in a large pot of salted boiling water according to package instructions.
- Drain and return to pot.
- Stir the mascarpone into the tomato sauce, season with salt and pepper, then pour over the pasta.
- Stir and serve immediately.
