Ingredients

  • 1/4 c. shortening
  • 3/4 c. firmly packed brown sugar
  • 1 egg
  • 2 c. flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 c. frzn orange juice concentrate (thawed and undiluted)
  • 1 (8 ounce.) can undrained crushed pineapple
  • 1/2 c. minced pecans

Method

  • Cream shortening - add in sugar; beat well.
  • Add in egg, beat well.
  • Combine soda, flour and salt.
  • Add in to creamed mix with orange juice.
  • Begin and end with flour mix.
  • Stir in pineapple and pecans.
  • Bake in greased and floured loaf pan.
  • 350 degrees about 50 min.
