Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 c. cold water
  • 1 (6 oz.) can frozen lemonade concentrate, thawed (undiluted)
  • 3/4 c. sugar
  • 1 c. evaporated milk, chilled
  • red food coloring
  • 1 (9-inch) pie crust shell, baked

Method

  • Sprinkle gelatin over cold water and undiluted lemonade concentrate in saucepan.
  • Place over low heat.
  • Stir constantly until gelatin dissolves, about 5 minutes.
  • Remove from heat.
  • Add sugar and stir until dissolved.
  • Chill, stirring occasionally, until completely cooled.
  • Pour chilled evaporated milk into chilled mixing bowl; beat at high speed of mixer until stiff, about 5 minutes.
  • Fold in cooled gelatin mixture.
  • Add a few drops of food coloring to make pink.
  • Put in crust.
  • Chill for about 2 hours.
