Method
- Brown roast on both sides in a dutch oven.
- Brown onions and add salt, pepper, oregano, thyme, cummin, sage, garlic, etc.
- Add water and bake it covered for 2 to 3 hours.
- After the meat is done, add sliced carrots and quartered potatoes and more salt and pepper.
- Cook another 30 minutes or so until vegetables are done, uncovered if you want browned vegetables.
