Ingredients

  • 1-1/2 cup Flour
  • 1/2 teaspoons Salt
  • 1 teaspoon Baking Powder
  • 1/2 teaspoons Ground Cinnamon
  • 1/4 teaspoons Ground Nutmeg
  • 1/4 cups Oats
  • 1/2 cups Brown Sugar
  • 1 cup Chocolate Chips
  • 1/2 cups Vegetable Oil
  • 1/2 cups Canned Pumpkin
  • 2 teaspoons Vanilla Extract
  • 1 Tablespoon Sugar
  • 3 Tablespoons Honey

Method

  • Preheat oven to 325°F. Grease an 8-inch square pan. Set aside.
  • In a large bowl, stir together flour, salt, baking powder, cinnamon, nutmeg, oats, brown sugar and chocolate chips. Set aside.
  • In a small bowl, whisk together the oil, pumpkin, vanilla, sugar and honey. Add the pumpkin mixture to the flour mixture. Stir until batter is just mixed.
  • Spoon batter into the prepared pan and use a spatula or your fingers to spread the batter evenly in the pan.
  • Bake for 25 minutes. Let cool in the pan on a wire rack for at least 20 minutes before cutting.
