Ingredients
- 4 c. pumpkin pulp
- 4 c. evaporated milk
- 2 c. sugar
- 4 large eggs (or 5 medium)
- 1 tsp. cinnamon or pumpkin pie spice
- 2 Tbsp. flour
- 1/4 tsp. salt
- 2 Tbsp. butter or oleo
Method
- Boil pared pumpkin in salt water until soft.
- Drain well, put through food mill to make pulp.
- In large bowl, combine pumpkin, milk and beaten eggs.
- Stir well.
- Mix together sugar, flour, salt and cinnamon then add to pumpkin.
- Lastly, slightly brown butter and stir into pumpkin mixture.
- Pour into pie crusts and bake at 400° for 10 minutes and then at 375° until done, about 50 minutes (or until knife comes out clean).

- Use fresh pumpkin.)
