Ingredients

  • 4 c. pumpkin pulp
  • 4 c. evaporated milk
  • 2 c. sugar
  • 4 large eggs (or 5 medium)
  • 1 tsp. cinnamon or pumpkin pie spice
  • 2 Tbsp. flour
  • 1/4 tsp. salt
  • 2 Tbsp. butter or oleo

Method

  • Boil pared pumpkin in salt water until soft.
  • Drain well, put through food mill to make pulp.
  • In large bowl, combine pumpkin, milk and beaten eggs.
  • Stir well.
  • Mix together sugar, flour, salt and cinnamon then add to pumpkin.
  • Lastly, slightly brown butter and stir into pumpkin mixture.
  • Pour into pie crusts and bake at 400° for 10 minutes and then at 375° until done, about 50 minutes (or until knife comes out clean).

  • Use fresh pumpkin.)
