Ingredients

  • basic custard for 1 pie
  • 3 eggs
  • 1 c. and 2 Tbsp. milk
  • 1 Tbsp. flour
  • salt and pepper to taste
  • 2 oz. grated Cheddar cheese
  • 2 oz. grated Swiss cheese

Method

  • Add a small amount of flour to milk and add to egg mixture. Bake 1 (9-inch) pie crust at 375° for 10 minutes or until begins to "puff up."
  • Mix cheeses.
  • Spread 1/2 of cheese mixture in bottom of shell.
  • Layer 3/4 cup of any mixture over cheese.
  • Add remaining cheese.
  • Pour basic custard over entire pie.
  • Bake at 375° for 35 to 40 minutes.
