Ingredients
- basic custard for 1 pie
- 3 eggs
- 1 c. and 2 Tbsp. milk
- 1 Tbsp. flour
- salt and pepper to taste
- 2 oz. grated Cheddar cheese
- 2 oz. grated Swiss cheese
Method
- Add a small amount of flour to milk and add to egg mixture. Bake 1 (9-inch) pie crust at 375° for 10 minutes or until begins to "puff up."
- Mix cheeses.
- Spread 1/2 of cheese mixture in bottom of shell.
- Layer 3/4 cup of any mixture over cheese.
- Add remaining cheese.
- Pour basic custard over entire pie.
- Bake at 375° for 35 to 40 minutes.
