Ingredients

  • 5 Idaho potatoes, washed (not peeled)
  • 48 oz. fresh vegetable oil

Method

  • Cut potatoes into 1/2-inch strips. Rinse in cold water and dry thoroughly before cooking (drying them well is the key to a crispy French fry). In a deep fryer or flat-bottomed wok, fry until halfway done and remove before potatoes start turning yellow. Let them drain. (Fries can be frozen at this point for future use.) When almost ready to serve, finish frying until golden brown and let drain again before adding salt to taste. Serves 4 to 6 (or use 2 to 3 servings and freeze remainder for future use).
