Ingredients

  • 2 cups milk
  • 1 3/4 cups water
  • 1 cinnamon stick
  • 2 teaspoons vanilla extract
  • 1/2 cup medium grain rice or short
  • 1/2 cup condensed milk
  • salt
  • 1 teaspoon ground cinnamon

Method

  • Heat up the milk with 3/4 cup of water and the cinnamon stick. Once the milk begins to boil add the rice and 1 teaspoon of vanilla extract.
  • Let the rice cook under low heat for 30 minutes
  • Once the rice is cooked, remove the cinnamon stick.
  • Mix the condensed milk with remaining water and stir. Add it to the rice, along with a pinch of salt and remaining vanilla extract.
  • Cook the mixture for 15 minutes or until all of the liquid has been absorbed by the rice.
  • Add the cinnamon and mix well. Allow the rice to cool.
  • Pour the mixture into popsicle molds, making sure that there is about 1/2 inch of space at the top.
  • Add popsicle sticks to each mold and place the molds into the freezer for six hours.
