Ingredients

  • 1/2 c. chopped onion
  • 1 crushed garlic bud
  • 1 1/2 c. rice
  • 6 c. chicken broth
  • 1 tsp. basil
  • salt and pepper
  • pinch of powdered saffron
  • 1/2 c. Parmesan cheese
  • 6 pork sausages

Method

  • Cook onion, garlic and rice in olive oil slowly for about 8 minutes, stirring constantly.
  • Season with basil, salt and pepper (if necessary) and add chicken broth to rice a little at a time, mixing constantly as the rice absorbs the liquid.
  • Add saffron. Cook about 30 minutes or until rice is tender and quite moist, but not mushy and soft.
  • Stir in cheese just before serving.
  • Serve with pork sausage.
