Ingredients

  • 4 medium potatoes, peeled and cut into bite size pieces
  • 1/2 tsp. salt
  • 2 Tbsp. butter
  • 1 medium onion, diced
  • 1 lb. Polska kielbasa sausage, cut into 1-inch pieces
  • 1 (14 to 16 oz.) can Italian stewed tomatoes
  • 2 to 4 tsp. paprika
  • 1 tsp. caraway seed

Method

  • In a 3-quart saucepan, heat potatoes, salt and enough water to cover to boiling.
  • Reduce heat and simmer 15 minutes or until potatoes are fork-tender.
  • Drain.
  • While potatoes are boiling, in a 12-inch skillet, heat butter.
  • Cook onions until tender.
  • Add sausage, tomatoes with liquid, paprika, caraway seed and 1/2 teaspoon salt.
  • Heat to boiling.
  • Reduce heat to low; cover and simmer 15 minutes.
  • Stir in potatoes and serve.
