Ingredients
- 4 medium potatoes, peeled and cut into bite size pieces
- 1/2 tsp. salt
- 2 Tbsp. butter
- 1 medium onion, diced
- 1 lb. Polska kielbasa sausage, cut into 1-inch pieces
- 1 (14 to 16 oz.) can Italian stewed tomatoes
- 2 to 4 tsp. paprika
- 1 tsp. caraway seed
Method
- In a 3-quart saucepan, heat potatoes, salt and enough water to cover to boiling.
- Reduce heat and simmer 15 minutes or until potatoes are fork-tender.
- Drain.
- While potatoes are boiling, in a 12-inch skillet, heat butter.
- Cook onions until tender.
- Add sausage, tomatoes with liquid, paprika, caraway seed and 1/2 teaspoon salt.
- Heat to boiling.
- Reduce heat to low; cover and simmer 15 minutes.
- Stir in potatoes and serve.
