Ingredients

  • 1 lb. bulk pork sausage
  • 4 eggs, hard-cooked
  • 1/2 c. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 c. milk
  • 1 (17 oz.) can whole kernel corn
  • 1 c. soft bread crumbs

Method

  • Saute sausage until browned.
  • Drain off fat and set meat aside.
  • Slice eggs and arrange half in 2-quart casserole.
  • Melt margarine in saucepan and blend in flour and seasoning.
  • Add milk and cook, stirring until thickened.
  • Add sausage and corn.
  • Mix well and pour over eggs in casserole.
  • Top with remaining eggs and sprinkle with crumbs.
  • Bake in preheated 375° for 25 minutes. Serves 6.
