Ingredients
- 1 lb. bulk pork sausage
- 4 eggs, hard-cooked
- 1/2 c. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 c. milk
- 1 (17 oz.) can whole kernel corn
- 1 c. soft bread crumbs
Method
- Saute sausage until browned.
- Drain off fat and set meat aside.
- Slice eggs and arrange half in 2-quart casserole.
- Melt margarine in saucepan and blend in flour and seasoning.
- Add milk and cook, stirring until thickened.
- Add sausage and corn.
- Mix well and pour over eggs in casserole.
- Top with remaining eggs and sprinkle with crumbs.
- Bake in preheated 375° for 25 minutes. Serves 6.
