• 1 12 cups red lentils
  • 1 lb hot Italian turkey sausage
  • 14 ounces sweet corn, drained
  • 1 medium onion, chopped
  • 4 celery ribs, chopped
  • 5 cups water
  • 14 teaspoon black pepper, freshly ground
  • 14 cup pearl barley


  • Brown sausage over medium heat with onions and celery breaking them into small pieces.
  • Pour in the water, add pepper, corn and lentils.
  • Stir all the ingredients, bring to a boil over medium heat, stirring occasionally.
  • Reduce heat, cover and simmer for 1 hour, stirring from time to time to prevent the lentils from sticking or burning.
  • Add barley after about a half hour, then remove lid and simmer the other half hour.
