Ingredients

  • 1 lb. grated cheddar cheese
  • 3 cups flour
  • 1 cup butter, at room temperature
  • 1 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 1 cup chopped pecans

Method

  • Beat the first five ingredients with an electric mixer until well combined.
  • Mix in the pecans.
  • Divide the dough into thirds.
  • Form each into a smooth 1-1/2-inch diameter log on a sheet of waxed paper.
  • Wrap tightly.
  • Refrigerate at least one hour to firm.
  • * Preheat the oven to 325F.
  • Remove the paper from the dough.
  • Cut the dough into 1/4-inch thick slices.
  • Arrange 1-1/2 inches apart on baking sheets.
  • Bake until golden brown, 15 to 18 minutes.
  • Transfer to paper towels and cool completely.
  • Store in an airtight container.
