Ingredients
- 1 lb. grated cheddar cheese
- 3 cups flour
- 1 cup butter, at room temperature
- 1 tsp. salt
- 1/4 tsp. cayenne pepper
- 1 cup chopped pecans
Method
- Beat the first five ingredients with an electric mixer until well combined.
- Mix in the pecans.
- Divide the dough into thirds.
- Form each into a smooth 1-1/2-inch diameter log on a sheet of waxed paper.
- Wrap tightly.
- Refrigerate at least one hour to firm.
- * Preheat the oven to 325F.
- Remove the paper from the dough.
- Cut the dough into 1/4-inch thick slices.
- Arrange 1-1/2 inches apart on baking sheets.
- Bake until golden brown, 15 to 18 minutes.
- Transfer to paper towels and cool completely.
- Store in an airtight container.
