Ingredients

  • shrimp
  • 1 bread Alentejo, or whole wheat bread, if possible, 2 days old
  • olive oil
  • garlic to taste
  • 1 egg yolk
  • coriander

Method

  • Boil the shrimp.
  • Moisten the sliced bread in the water used to boil the shrimp.
  • In a sauce pan, heat a little bit of oil, and lightly fry the finely chopped garlic and shrimp.
  • Drain the bread very well, and add to saucepan.
  • Add chopped coriander.
  • Remove saucepan from heat, and immediately add the egg yolk, stir quickly, and serve immediately.
