Ingredients
- shrimp
- 1 bread Alentejo, or whole wheat bread, if possible, 2 days old
- olive oil
- garlic to taste
- 1 egg yolk
- coriander
Method
- Boil the shrimp.
- Moisten the sliced bread in the water used to boil the shrimp.
- In a sauce pan, heat a little bit of oil, and lightly fry the finely chopped garlic and shrimp.
- Drain the bread very well, and add to saucepan.
- Add chopped coriander.
- Remove saucepan from heat, and immediately add the egg yolk, stir quickly, and serve immediately.
