Ingredients
- 4 1/2 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 3/4 tsp salt
- 1 1/4 cup shortening
- 2 cup sugar
- 2 eggs
- 1 1/2 tsp vanilla
- 1/2 tsp lemon extract
- 1 cup buttermilk
- 1/2 cup sugar
- 2 tbsp cinnamon
Method
- Medium bowl, stir flour, baking powder, baking soda, & salt
- Large bowl beat shortening, sugar, eggs, vanilla & lemon extract
- Alternating flour, & buttermilk, shortening.
- Cover & chill for 4 hrs
- Preheat oven 375, small bowl combine the 1/2 cup sugar & cinnamon.
- Lightly grease cookie sheet set aside: each cookie use a 1/4 cup or 1/4 ice cream scoop.
- Roll each scoop of dough in the sugar cinnamon mixture 2 coat.
- Place 3 in apart on cookie sheet.
- with the palm of ur hand, gently press cookie 1/2 inch thickness.
- Bake for 12-14 mins or until bottoms are golden.
- Transfer to wire racks; cool.
- The cookies bake more evenly if you bake one batch @ a time.
