Ingredients

  • 1 (10 oz.) pkg. spinach
  • 1/2 c. scallions, chopped
  • 3 Tbsp. butter
  • 1/2 c. parsley, chopped
  • 2 sprigs dill or 1/2 tsp. dried dill
  • salt and pepper to taste
  • 1 c. Feta cheese, crumbled
  • 4 eggs
  • 2 c. milk
  • 1 c. Bisquick
  • 1 Tbsp. butter

Method

  • Clean spinach.
  • Scald in boiling water briefly and drain it well.
  • Saute the scallions in 3 tablespoons of butter until soft. Add spinach, parsley, dill, salt and pepper and cook for about 5 minutes.
  • Place the spinach mixture in a well-greased 10-inch pie plate.
  • Sprinkle the cheese evenly over the top.
