Ingredients

  • 1 1/2 lb. fresh cooked string beans
  • 1 lb. shrimp, shelled, deveined and cooked
  • 1/2 tsp. basil
  • 1/3 c. olive oil
  • 1 Tbsp. lemon juice
  • 2 cloves garlic, minced
  • 1/2 red onion, minced
  • 2 Tbsp. red wine vinegar
  • 1/2 tsp. anchovy paste
  • 1/2 tsp. salt

Method

  • Combine string beans, garlic, onion and shrimp in large bowl. Toss.
  • Whisk together vinegar, lemon juice, anchovy paste, basil, salt and oil.
  • Pour dressing over beans and shrimp.
  • Cover.
  • Let stand at room temperature for an hour or cover and refrigerate for up to 8 hours before serving.
  • Serve at room temperature.
