- 1 1/2 lb. fresh cooked string beans
- 1 lb. shrimp, shelled, deveined and cooked
- 1/2 tsp. basil
- 1/3 c. olive oil
- 1 Tbsp. lemon juice
- 2 cloves garlic, minced
- 1/2 red onion, minced
- 2 Tbsp. red wine vinegar
- 1/2 tsp. anchovy paste
- 1/2 tsp. salt
Method
- Combine string beans, garlic, onion and shrimp in large bowl. Toss.
- Whisk together vinegar, lemon juice, anchovy paste, basil, salt and oil.
- Pour dressing over beans and shrimp.
- Cover.
- Let stand at room temperature for an hour or cover and refrigerate for up to 8 hours before serving.
- Serve at room temperature.
