Ingredients

  • 1-1/2 qt. cooked barley

  • 1 cup seedless cucumbers, peeled, small dice
  • 1 cup green onions, chopped
  • 1 cup yellow peppers, small dice
  • 1/4 cup red peppers, small dice
  • 1/4 cup red onions, grilled, fine dice
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped
  • 2-1/2 Tbsp. lemon zest, grated Safeway 4 ct For $5.00 thru 02/09
  • 1/4 cup fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
  • 1/2 tsp. crushed red pepper
  • to taste salt and black pepper
  • 1 cup KRAFT Golden Italian Dressing

Method

  • Combine all ingredients except dressing in large bowl.
  • Cover and refrigerate until ready to serve.
  • Add dressing; toss to coat.
  • Serve chilled or at room temperature.
