Ingredients

  • 1 1/2 cup cubed watermelon
  • 1/2 cucumber
  • 1/4 cup drained chickpeas
  • 1/2 head lettuce
  • 1 crumbled feta cheese
  • 1 packages strawberries
  • 1/4 cup avocado pulsed smooth
  • 2 tbsp honey
  • 6 tbsp yoghurt
  • 1 tsp olive oil
  • 1 ground peppercorn
  • 1 tbsp lemon juice
  • 1 pinch salt
  • 1 tbsp mayonnaise
  • 1 sesame seeds for sprinkling
  • 1 handful of raspberries

Method

  • Remove all seeds from watermelon.
  • And cube to bite sized pieces
  • Slice cucumber into strips lengthwise
  • Remove strawberry stems and half the strawberries lengthwise
  • Ensure that the chickpeas are properly drained.
  • Tear lettuce into medium sized pieces
  • Layer lettuce down first.
  • Add chickpeas onto lettuce and then place cucumber slices on top.
  • Throw on the watermelon chunks, whole raspberries and strawberry halves.
  • For the dressing : mix olive oil, honey,mayonnaise and yoghurt together.
  • Add salt, pepper and lemon juice.
  • Mix till well blended
  • To serve: drizzle avocado onto salad, pour salad on the dressing and sprinkle crumbled feta and sesame seeds onto the top.
