- 1 1/2 cup cubed watermelon
- 1/2 cucumber
- 1/4 cup drained chickpeas
- 1/2 head lettuce
- 1 crumbled feta cheese
- 1 packages strawberries
- 1/4 cup avocado pulsed smooth
- 2 tbsp honey
- 6 tbsp yoghurt
- 1 tsp olive oil
- 1 ground peppercorn
- 1 tbsp lemon juice
- 1 pinch salt
- 1 tbsp mayonnaise
- 1 sesame seeds for sprinkling
- 1 handful of raspberries
Method
- Remove all seeds from watermelon.
- And cube to bite sized pieces
- Slice cucumber into strips lengthwise
- Remove strawberry stems and half the strawberries lengthwise
- Ensure that the chickpeas are properly drained.
- Tear lettuce into medium sized pieces
- Layer lettuce down first.
- Add chickpeas onto lettuce and then place cucumber slices on top.
- Throw on the watermelon chunks, whole raspberries and strawberry halves.
- For the dressing : mix olive oil, honey,mayonnaise and yoghurt together.
- Add salt, pepper and lemon juice.
- Mix till well blended
- To serve: drizzle avocado onto salad, pour salad on the dressing and sprinkle crumbled feta and sesame seeds onto the top.
