Ingredients
- 20 large marshmallows
- 2 (29 oz.) cans sweet potatoes
- 1/2 c. butter, melted
- 2 egg yolks, beaten
- dash of salt
- 4 c. crushed cornflakes
Method
- Drain and mash sweet potatoes; add 1/4 cup melted butter, egg yolks and salt.
- Mix and divide into 20 portions. Wrap each portion around a marshmallow.
- Add 1/4 cup melted butter to cornflake crumbs and rol leach portion in crumbs.
- Place in an 8 x 11-inch baking dish and bake in a 350° oven about 20 minutes or until heated through.
