Ingredients

  • 20 large marshmallows
  • 2 (29 oz.) cans sweet potatoes
  • 1/2 c. butter, melted
  • 2 egg yolks, beaten
  • dash of salt
  • 4 c. crushed cornflakes

Method

  • Drain and mash sweet potatoes; add 1/4 cup melted butter, egg yolks and salt.
  • Mix and divide into 20 portions. Wrap each portion around a marshmallow.
  • Add 1/4 cup melted butter to cornflake crumbs and rol leach portion in crumbs.
  • Place in an 8 x 11-inch baking dish and bake in a 350° oven about 20 minutes or until heated through.
