Ingredients
- 1 lb. chopped broccoli
- salt
- 3 Tbsp. butter
- 2 Tbsp. flour
- 3 Tbsp. chopped onions
- 1 1/4 c. milk
- 2 c. shredded Swiss cheese
- 2 eggs, beaten
Method
- Cook broccoli in salted water for 10 minutes; drain.
- In 2-quart pot, melt butter.
- Stir in flour and 1 1/2 teaspoons salt until smooth.
- Add onions, cook 1 minute.
- Preheat oven to 325°. Slowly stir in milk.
- When mix thickens, remove from heat.
- Stir in cheese and broccoli; stir in eggs.
- Pour into greased baking dish, bake 30 minutes or until firm to the touch.
