Ingredients

  • 1 lb. chopped broccoli
  • salt
  • 3 Tbsp. butter
  • 2 Tbsp. flour
  • 3 Tbsp. chopped onions
  • 1 1/4 c. milk
  • 2 c. shredded Swiss cheese
  • 2 eggs, beaten

Method

  • Cook broccoli in salted water for 10 minutes; drain.
  • In 2-quart pot, melt butter.
  • Stir in flour and 1 1/2 teaspoons salt until smooth.
  • Add onions, cook 1 minute.
  • Preheat oven to 325°. Slowly stir in milk.
  • When mix thickens, remove from heat.
  • Stir in cheese and broccoli; stir in eggs.
  • Pour into greased baking dish, bake 30 minutes or until firm to the touch.
