- 1 stick butter, unsalted at room temperature, 1/2 cup
- 1 cup flour, all-purpose
- 2 tablespoons thyme freshly chopped
- 1/4 teaspoon salt
- 1/2 cup powdered sugar
- 2 tablespoons lemon juice freshly squeezed
- 1 teaspoon vanilla extract
- 2 tablespoons lemon juice freshly squeezed
- 1/2 cup powdered sugar
Method
- Place an oven rack in the center of the oven.
- Preheat the oven to 325F (160C).
- Butter and flour an 8 by 8-inch glass baking dish.
- To make the bars:
- In a small bowl mix together flour, thyme and salt.
- Set aside.
- Beat 1 stick of butter and powdered sugar in a large bowl with an electric mixer on high speed until light and fluffy, about 30 seconds.
- Beat in the lemon juice and vanilla.
- Reduce the speed to low and slowly add the flour mixture.
- Using damp fingers, press the dough into the prepared pan.
- Bake for 30 minutes until golden.
- Cool for half an hour.
- To make the glaze:
- Add the lemon juice and powdered sugar in a medium bowl, whisk until smooth.
- Spoon the glaze over the cooled crust.
- Let the glaze harden, at room temperature, for at least 1 hour or longer.
- Using a metal spatula, remove the crust from the pan.
- Cut into 1 1/2-inch square bars, serve or store in an air-tight container at room temperature.
