Ingredients

  • 1 stick butter, unsalted at room temperature, 1/2 cup
  • 1 cup flour, all-purpose
  • 2 tablespoons thyme freshly chopped
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice freshly squeezed
  • 1/2 cup powdered sugar

Method

  • Place an oven rack in the center of the oven.
  • Preheat the oven to 325F (160C).
  • Butter and flour an 8 by 8-inch glass baking dish.
  • To make the bars:
  • In a small bowl mix together flour, thyme and salt.
  • Set aside.
  • Beat 1 stick of butter and powdered sugar in a large bowl with an electric mixer on high speed until light and fluffy, about 30 seconds.
  • Beat in the lemon juice and vanilla.
  • Reduce the speed to low and slowly add the flour mixture.
  • Using damp fingers, press the dough into the prepared pan.
  • Bake for 30 minutes until golden.
  • Cool for half an hour.
  • To make the glaze:
  • Add the lemon juice and powdered sugar in a medium bowl, whisk until smooth.
  • Spoon the glaze over the cooled crust.
  • Let the glaze harden, at room temperature, for at least 1 hour or longer.
  • Using a metal spatula, remove the crust from the pan.
  • Cut into 1 1/2-inch square bars, serve or store in an air-tight container at room temperature.
