Ingredients

  • 1/2 None rotisserie chicken, cooled, chopped
  • 1/2 cup mayonnaise
  • 1 tsp lemon juice
  • 3 stalks celery, trimmed, roughly chopped
  • 1/3 cup fresh chives, roughly chopped
  • 4 tbsp butter, softened
  • 24 slices white and/or wheat bread
  • 8 slices Cheddar cheese

Method

  • Place chicken in a food processor and pulse until finely chopped. Add mayonnaise, lemon juice, celery and chives and process to combine. Season.
  • Butter each slice of bread then place a slice of cheese on the buttered side of 8 slices. Top cheese with another slice of bread then spread chicken mixture evenly over top. Add remaining bread on top to make triple-decker sandwiches.
  • Cut out sandwiches using a rabbit-shaped cookie cutter or a sharp knife.
