Ingredients
- 8 large Vidalia onions, cut in chunks
- 1/4 c. margarine
- 1/2 c. uncooked rice
- 1 c. boiling salted water
- 1 c. grated Swiss cheese or Velveeta
- 2/3 c. half and half or 1 c. sour cream
Method
- Saute onions in butter until transparent, not brown. Meanwhile, cook rice in water for 5 minutes on low heat.
- Place rice, onions, cheese and half and half, stirred together, in a casserole baking dish.
- Bake 1 hour at 325°.
- Serves 8 to 10.
