Ingredients

  • 1 Tbsp. unflavored gelatin
  • 1/4 c. cold water
  • 4 Tbsp. plain flour
  • 1/2 tsp. salt
  • 1 1/2 c. milk
  • 3/4 tsp. vanilla
  • 1/4 tsp. almond extract
  • 1/2 c. whipping cream
  • 1/4 tsp. cream of tartar
  • 1/2 c. sugar
  • 1 c. shredded coconut

Method

  • Soften gelatin in 1/4 cup cold water.
  • Mix together in the saucepan the flour, salt and milk.
  • Cook over low heat, stirring until it boils.
  • Boil for 1 minute; remove from heat and stir in softened gelatin.
  • Cool.
  • When partially set, beat with rotary beater until smooth and blend in vanilla and almond extract. Gently fold in stiffly beaten whipping cream.
  • Carefully fold in a meringue of the egg whites, cream of tartar and sugar.
  • Fold in coconut and pour into a 9 or 10-inch pie crust.
  • Sprinkle with coconut.
  • Refrigerate.
