- 1 Tbsp. unflavored gelatin
- 1/4 c. cold water
- 4 Tbsp. plain flour
- 1/2 tsp. salt
- 1 1/2 c. milk
- 3/4 tsp. vanilla
- 1/4 tsp. almond extract
- 1/2 c. whipping cream
- 1/4 tsp. cream of tartar
- 1/2 c. sugar
- 1 c. shredded coconut
Method
- Soften gelatin in 1/4 cup cold water.
- Mix together in the saucepan the flour, salt and milk.
- Cook over low heat, stirring until it boils.
- Boil for 1 minute; remove from heat and stir in softened gelatin.
- Cool.
- When partially set, beat with rotary beater until smooth and blend in vanilla and almond extract. Gently fold in stiffly beaten whipping cream.
- Carefully fold in a meringue of the egg whites, cream of tartar and sugar.
- Fold in coconut and pour into a 9 or 10-inch pie crust.
- Sprinkle with coconut.
- Refrigerate.
