Ingredients
- 1 cup wild rice
- 2 cups vegetable stock
- 1 tablespoon vegetable oil
- 1 zucchini
- 2 carrots
- 1 green onion
- 1 green bell pepper
Method
- Cook the rice in the stock for about 30 minutes until softened.
- Add the oil to a skillet on medium heat. Add the zucchini, carrots, onion, and bell pepper and saute for 5 minutes.
- Add the wild rice and mix well.
