Ingredients

  • 12 cup chopped onion
  • 2 tablespoons olive oil
  • 2 tablespoons tarragon leaves
  • 1 tablespoon coriander powder
  • 1 dash cayenne pepper (optional)
  • 4 cups vegetable broth
  • 1 cup yellow lentils
  • 3 parsnips, peeled & chopped
  • 4 carrots, peeled & chopped
  • salt, to taste

Method

  • Cook the onion in oil until translucent.
  • Add the spices, root vegetables, lentils & broth and cook over medium heat about 30 minutes or until the ingredients are softened.
  • Tastes even better with a dollop of sour cream or a small pat of goat cheese.
