Ingredients

  • 3 eggs, beaten
  • 2 c. sugar
  • 1 c. oil
  • 1 Tbsp. vanilla
  • 2 c. zucchini, peeled and grated
  • 2 c. flour
  • 1 Tbsp. cinnamon
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 1 c. chopped walnuts
  • raisins (optional)

Method

  • Beat eggs until frothy. Beat in sugar, oil and vanilla until lemon colored.
  • Stir in zucchini and flour sifted with cinnamon, soda, salt and baking powder.
  • Fold in walnuts and raisins.
  • Pour into 2 oiled and floured loaf pans.
  • Bake for 1 hour at 350°. Cool for 10 minutes.
