Ingredients
- 3 c. flour
- 1 tsp. nutmeg
- 2 tsp. cinnamon
- 1 tsp. baking soda
- 1 tsp. salt
- 1/4 tsp. baking powder
- 3 eggs
- 2 c. sugar
- 1 c. cooking oil
- 1 Tbsp. vanilla
- 2 c. grated unpeeled zucchini squash
Method
- Sift together flour, spices, baking powder, soda and salt. Beat eggs well.
- Gradually add sugar and oil, mixing well.
- Add vanilla and dry ingredients; blend well.
- Stir in zucchini.
- Bake at 350° for 1 hour in 1 Bundt pan or 2 greased and floured loaf pans.
- Let stand 10 minutes before removing from pan.
