Ingredients

  • 3 c. flour
  • 1 tsp. nutmeg
  • 2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 3 eggs
  • 2 c. sugar
  • 1 c. cooking oil
  • 1 Tbsp. vanilla
  • 2 c. grated unpeeled zucchini squash

Method

  • Sift together flour, spices, baking powder, soda and salt. Beat eggs well.
  • Gradually add sugar and oil, mixing well.
  • Add vanilla and dry ingredients; blend well.
  • Stir in zucchini.
  • Bake at 350° for 1 hour in 1 Bundt pan or 2 greased and floured loaf pans.
  • Let stand 10 minutes before removing from pan.
